Can we utilize existing models to analyze the movement of one arm of a person shaking hands?
We will use the results to determine the specifications of the motors to be installed on the robot to be worn on one arm.

This should be possible but with some considerations. You should keep in mind that the idea behind muscle recruitment in inverse dynamics analysis is that we are simulating a voluntary movement. So it can be a little bit tricky in a handshake to distinguish the voluntary component from the involuntary component. If you have some kind of rig where you can measure movement and force applied by a subject during handshake, then it should be possible to analyze the movement.
