Is there a model available that allows for the change of weight while simultaneously shows what happens in the knees?

that is a rather general question, so the answer is yes, there are several models. You can apply different scaling laws to the models to change the size and the weight of models, see e.g. the tutorial about scaling, http://www.anybodytech.com/fileadmin/AnyBody/Docs/Tutorials/chap10_Scaling/intro.html. These can be easily applied to any model which is not MoCap driven. For the Mocap model it is a bit different since these are scaled according to the markers, but it is possible to set the weight of the subject.
For any of these scaled models it is possible to obtain changes in e.g. loads in the knee.
What is it exactly you would like to study? It may be possible to guide you to a specific model if you have a few more details about the problem.
